Sole En Papillote

Let’s make a parcel!

En papillote translates to “in parchment.” So you will need parchment paper for this easy recipe. But honestly aluminum foil will work as well.

Reel in your ingredients!

2 (6-ounce) sole fillets or any white fish

1 leek, sliced into 1/4 inch white parts only

12 green and black olives, pitted

1/4 cup grapes, seedless

1 tbsp capers

2 cloves garlic

1/4 cup cream

1/4 tablespoons olive oil

2 tablespoons dry white wine (optional if you want to be fancy)

1 tsp tablespoon fresh lemon juice

Heat oven to 400 degrees

Make your leeks.

In a nonstick pan, melt the butter over medium heat. Don’t let it burn!

Add the leeks, garlic and sprinkle with salt and pepper. When leeks start to wilt add cream.

Reduce heat to low and cook for 5 minutes . Leeks will continue to cook in oven with fish.

Olive and Grape Tapenade

Finely chop olives, grapes, parsley, capers and garlic. Alternatively you can use a food processor. I was tired and hungry so I did a quick chop.

In a bowl, mix chopped ingredients with lemon juice and olive oil.

The en papillote part.

Cut parchment paper into pieces large enough for the fish to sit with extra for crimping.

Wash the fish and pat them dry.

Season both sides with salt and black pepper.

Place a fish fillet on the parchment paper.

Top each fillet with tapenade and drizzle olive oil and lemon juice.

Fold the parchment paper around the edges tightly in creating a half moon shape.

It’s important to press tightly as you crimp and fold to seal the packets well so the steam does not escape.

Place on baking sheet or oven safe pan

Bake for 15 minutes.

Transfer to a plate and enjoy.
