Mini Cheesecakes with Raspberry Topping

(Keto Friendly adjustments below)



Makes 12 mini cakes

Pick out your ingredients!

Crust

16 Graham Crackers, ginger snaps or any biscuits of your choice.

4 tbsp unsalted butter, melted 1/4 cup sugar 1/2 tsp cinnamon

The cheesecake 1 pound cream cheese room temperature 1/4 tsp salt 1 cup sugar

1 tsp vanilla extract 2 eggs large, room temperature 2 egg yolks

1/3 cup sour cream

*To make this easy sit your cream cheese out on the counter so it is room temperature when you are ready to use it.

Let’s get cooking!

Turn the oven on to 325 degrees.

Line a regular size muffin tin with paper liners.

Combine cookies, butter and sugar in a small bowl. The texture should be similar to wet sand. Divide crust evenly into the bottom of the lined muffin tin.

Press down with small glass or anything that fits.

Bake for 5-6 minutes or until golden brown. Take out of the oven and cool completely, set aside.

Now the cheesecake part!

Beat cream cheese until soft. A stand mixer makes it easier but I have done this many times by hand with a wooden spoon.

Add in sour cream, sugar, eggs and vanilla. Mix until combined.

Pour cheesecake mixture into cooled cookie crust and fill each muffin almost to the top.

Place in the oven and bake for 20 minutes. They need to be set so cook longer if you need to! There will be some movement to them. Cracking in the cheesecake is a sign that they are overcooked.

Cool them and chill in the refrigerator. Top with raspberry coulis or caramel or any toppings of your choice!

Make it Keto. It’s still delicious!

I make the keto version of this all the time and the girls do not notice!

You only need to substitute the crust and the sugar everything else is keto approved.

Sugar Replacement

My favourite keto friendly sweetener is Swerve. It measures cup for cup to regular sugar.

Keto crust

2 cups walnuts

4 tbsp butter

Mix together in food processor and bake for 10 minutes before pouring cheese cake mixture and baking together.

Alternatively you can make this crust less.
